Heat a portion of butter and olive oil in a non-stick skillet over medium-high heat. Sauté the shallots until translucent, then add the mushrooms and cook until browned.






Stir in the spinach and Parmesan cheese, seasoning with salt and pepper to taste. Once the spinach has wilted, remove the mixture from the pan and set aside.





Wipe the skillet clean. Add the remaining butter and olive oil over medium heat. Pour in the whisked eggs and allow them to set for 30 seconds.






Loosen the edges of the omelette, add the mushroom and spinach filling to the center, and cook for another 2 minutes.




Carefully fold the omelette in half, slide it onto a serving plate, and garnish with additional grated Parmesan cheese.
