Stir in the canned tomatoes and sugar. Reduce the heat and simmer for 8 to 10 minutes until the sauce has thickened.




Using the back of a large spoon, create four small wells in the tomato sauce. Carefully crack one fresh egg into each well.


Cover the pan with a lid and cook over low heat for 6 to 8 minutes, or until the egg whites are set but the yolks remain runny.


Remove from heat, garnish with fresh coriander leaves, and serve immediately with crusty bread.
