In a separate mixing bowl, whisk the egg yolks and sugar together until the mixture is pale and slightly thickened.




Slowly temper the egg yolk mixture by gradually whisking in a small amount of the hot milk, then pour the tempered eggs back into the saucepan with the remaining milk.




Cook the custard over low heat, stirring constantly, until it thickens enough to coat the back of a spoon, then remove from heat and chill in the refrigerator for 2 hours.



Pour the chilled custard into an ice cream machine and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Transfer the ice cream to a freezer-safe container and freeze for at least 4 hours to firm up before serving.
