In a separate small bowl, combine the lemon juice, lemon zest, lemon extract, cooking oil, and eggs, whisking until well incorporated.








Pour the wet mixture into the dry ingredients and blend until a crumbly dough forms, then gently fold in the fresh blueberries.



Turn the dough onto a lightly floured cutting board and knead gently 8 to 10 times. Divide the dough in half and shape each portion into a log approximately 8 inches long and 1 inch thick.


Place the logs onto a cookie sheet coated with cooking spray and bake for 30 minutes.




Remove the logs from the oven and allow them to cool on a wire rack for 10 minutes.


Using a serrated knife, slice the logs into biscotti pieces. Arrange them cut-side down on the cookie sheet, spaced 1 inch apart.


Bake for an additional 10 to 15 minutes until crisp, then transfer to a wire rack to cool completely.
