In a mixing bowl, whisk together the olive oil, lemon juice, lemon zest, dill, and the prepared garlic paste.








Add the lamb stew meat to the marinade, ensuring it is thoroughly coated, then cover and refrigerate for at least 2 hours or overnight.



If using bamboo skewers, soak them in cold water for 30 minutes to prevent burning during grilling.



Remove the lamb from the refrigerator 30 minutes before cooking, then thread the meat onto the skewers.


Preheat your grill or a grill pan to high heat. Cook the skewers for 2 to 3 minutes per side, basting occasionally with the remaining marinade.
