Place the whole chicken into a large resealable bag, pour the brine over it, and refrigerate for at least one hour.


In a saucepan, combine the dipping sauce ingredients and simmer over medium heat until the sauce thickens.

Strain the thickened sauce into a bowl and set aside.


Remove the chicken from the brine and grill until cooked through and golden brown. Add the pineapple slices to the grill during the last few minutes.



Baste the chicken and pineapple with the prepared sauce, turning and basting every few minutes until well-glazed.
