In a large mixing bowl, whisk together your dry ingredients (flour and baking powder).




In a separate bowl, beat the eggs and whisk in the milk. Incorporate the cooled cranberry mixture into this wet mixture.




Pour the wet ingredients into the dry ingredients and mix until just combined. Allow the batter to rest for 2 minutes.

Heat a griddle or frying pan over medium heat and lightly grease with cooking spray or oil. Pour a spoonful of batter onto the surface.



Cook for 2 minutes until golden brown and bubbles form, then flip and cook the other side for an additional 2 minutes. Repeat until all batter is used.
