Drain the apples using a colander and transfer them to a large saucepan. Add the sugar and cook over medium heat for 30 minutes, stirring regularly. Add a few tablespoons of water if the mixture becomes too dry.





Stir in the cinnamon and vanilla extract. Remove from heat.



Transfer the mixture to a blender and process until completely smooth.

Add the butter to the warm apple puree and blend again until fully incorporated and glossy.
