In a separate heavy-bottomed saucepan, melt the butter over medium heat. Stir in the brown sugar until the mixture resembles wet sand.






Add the sugar syrup to the butter mixture and stir frequently until it reaches a viscous, boiling consistency.






Lower the heat and gradually whisk in the heavy cream. Increase the heat to medium and simmer for 10 minutes, stirring frequently, then continue to boil for an additional 2 minutes.



Remove the sauce from the heat. Once slightly cooled, whisk in the rum, vanilla extract, and salt to taste.




Thread the cooked pumpkin cubes onto wooden skewers and serve alongside the butterscotch-rum sauce, garnished with walnuts.
