While the potatoes roast, thinly slice the sweet onion and finely chop the remaining portion. Finely chop the garlic cloves. Halve the lime and squeeze the juice into a small bowl.







In the bowl with lime juice, combine the sliced onion, a pinch of sugar, and a pinch of salt. Stir well and set aside to quick-pickle.






Heat a drizzle of cooking oil in a large pan over medium-high heat. Add the chopped onion, seasoning with salt and pepper, and cook until softened. Add the garlic and cook until fragrant.







Add the ground pork to the pan, breaking it up with a spatula, and cook until browned and fully cooked through.



In a separate bowl, mix the BBQ sauce, the pickling liquid from the onions, ketchup, sugar, and water. Pour this mixture into the pan with the pork and simmer until the sauce thickens.










Brush the cut sides of the buns with melted butter and toast them in the oven or a toaster until golden brown. Assemble the sandwiches by filling the buns with the BBQ pork mixture and topping with the pickled onions and hot sauce.
