In a mixing bowl, whisk together the cooking oil, milk, sugar, and vanilla essence until well combined.






In a separate bowl, combine the all purpose flour, sliced almonds, pistachios, salt, and baking soda.






Create a well in the center of the dry ingredients, pour in the liquid mixture, and stir gently with a wooden spoon until just combined; do not overmix.

Scoop one teaspoon of the dough at a time, roll into small balls, and place them on the prepared baking sheet, spacing them apart before flattening slightly.


Bake in the center of the oven for 8 to 10 minutes, or until a skewer inserted into the center comes out clean.


Allow the cookies to cool on the baking tray for 5 minutes, then transfer them to a wire rack to cool completely before drizzling with the saffron icing.
