Place the raw almonds into the food processor and pulse until they are coarsely chopped, ensuring they do not turn into flour.

Add the prepared pitted dates, cocoa powder, and any remaining ingredients to the food processor. Blend until the mixture is uniform and sticky enough to hold its shape.

Scoop small portions of the mixture and roll them into 12 uniform balls using your hands.
Optionally, roll the finished balls in shredded coconut or extra cocoa powder for a decorative finish.

Place the balls in an airtight container and refrigerate for at least 15 minutes to allow them to firm up before serving.
