While the batter rests, prepare the syrup in a saucepan by boiling sugar, water, and saffron until it reaches a honey-like consistency. Set aside to cool.



Transfer the fermented batter into a piping bag with a small nozzle. Heat vegetable oil in a deep-frying pot to 175°C.



Pipe the batter into the hot oil in circular, spiral motions. Fry until golden brown and crispy on both sides, then remove using a slotted spoon.



Immediately dip the hot fried pastries into the prepared syrup for a few seconds, then transfer to a wire rack to drain excess syrup before serving.
