Squeeze the grated zucchini firmly to remove all excess water. Coarsely chop the carrots into small pieces.




In a large mixing bowl, combine the squeezed zucchini, chopped carrots, scallions, cornmeal, salt, turmeric, and eggs. Mix until the ingredients are thoroughly incorporated.









Heat olive oil in a saute pan over medium-high heat.



Scoop 1/4 cup of the mixture into the pan for each fritter and flatten them into patties. Fry for 3-4 minutes per side until golden brown.
