Remove the pot from the heat and quickly whisk in the egg yolks to temper them into the warm caramel base. Set aside to cool.



In a separate saucepan, combine the granulated sugar and port wine. Heat until the mixture reaches the soft-ball stage using a candy thermometer.




While the syrup cooks, whip the egg whites in a mixing bowl until stiff peaks form.



Slowly pour the hot port syrup into the egg whites while continuing to whip until the meringue is glossy and cool.



Divide the manjar blanco into serving glasses and top with the port meringue. Dust with cinnamon before serving.
