Remove the meat using a slotted spoon and drain the excess fat from the pot.


Add olive oil to the pot over medium heat, then sauté the carrots, onions, and garlic until softened.





Return the browned meat to the pot and stir in the chili powder, cumin, oregano, salt, and chopped chipotle chile.






Pour in the tomatoes and beef stock, bring to a simmer, then reduce heat and cook gently.




Stir in the majority of the black beans and cook for an additional five minutes.


Mash the remaining black beans with a fork and stir them into the chili to thicken the consistency.
