Remove the saucepan from the heat, cover, and allow the mint syrup to steep and infuse for at least one hour.


In a blender, combine the lemon juice and cubed watermelon. Process until smooth.




Strain the mint syrup and add it to the watermelon mixture in the blender, 1/4 cup at a time, pulsing until the desired level of sweetness is achieved.





Pour the watermelon-mint mixture into a large pitcher, stir in the cold water and gin, and serve chilled.
