Let the batter rest at room temperature for at least 30 minutes to allow the chickpea flour to hydrate properly.


Preheat your oven to 230°C and place a cast iron skillet inside to heat up. Once hot, carefully remove the skillet, coat it with a thin layer of olive oil, and pour in the batter.



Bake the socca for 10 to 15 minutes, or until the edges are golden brown and crispy. Optionally, broil for the last minute to achieve a charred, blistered top.
