In a saucepan, heat heavy cream and vanilla bean paste until simmering, then remove from heat and stir in the bourbon.




Whisk egg yolks and granulated sugar in a mixing bowl until pale and smooth, then slowly temper in the warm cream mixture.





Pour the custard mixture into the ramekins and bake in the water bath for 40-45 minutes until set but slightly jiggly in the center.



Remove from the oven, cool to room temperature, then refrigerate for at least 4 hours.


Before serving, sprinkle a thin layer of sugar over each custard and caramelize using a kitchen torch until golden brown and crisp.
