Heat the high heat cooking oil in a wok over medium-high heat until shimmering. Add the eggplant batons and sauté, allowing them to blister and brown evenly on all sides for about 5-7 minutes.



Add the chili bean paste mixture to the wok and stir-fry for 30 seconds until fragrant.




Pour in the chicken stock mixture, reduce heat to medium-low, and simmer for 90 seconds. Stir in the cornstarch slurry and cook until the sauce thickens and coats the eggplant.






Stir in the scallion and vinegar mixture, cooking for 15 seconds to meld the flavors. Garnish with fresh cilantro and serve immediately.
