In a separate small bowl, whisk together the all-purpose flour, baking powder, salt, and spice blend.






With the mixer on low speed, gradually add the dry flour mixture to the wet pumpkin mixture, mixing only until just combined to avoid overworking the batter.



Lightly coat the doughnut pan with non-stick cooking spray and fill each well about three-quarters full, using a small spatula to smooth the tops.




Bake for 12 to 15 minutes, or until a toothpick inserted into the center comes out clean.


While the doughnuts bake, combine the cinnamon and sugar in a small bowl. Once the doughnuts are removed from the oven, gently toss them in the cinnamon sugar mixture and let them cool on a wire rack.
