Heat the olive oil in a large stock pot over medium heat. Add the onions and garlic, sautéing until softened and fragrant.





Add the potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are very tender, about 45 minutes.



Use a potato masher to partially crush the potatoes directly in the pot to thicken the broth. Stir in the kale and cook for an additional 5 minutes until wilted.





Season the soup with salt and black pepper to taste. Serve hot.
