In a heavy-bottomed pot, heat the olive oil over medium heat and add the rice, stirring gently to coat the grains.




Pour in the water and salt, bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes until the liquid is absorbed.




While the rice cooks, bloom the saffron threads in a small amount of warm water.






In a separate small pan, sauté the dried barberries with a touch of oil and sugar until they plump up, then gently fold them and the saffron water into the cooked rice.
