Bake the bacon for 15 minutes or until golden and crisp. Remove from the oven, transfer the bacon to a plate lined with paper towels to drain, and reserve the rendered bacon fat.






In a small sauté pan over medium-high heat, toast the pine nuts, stirring frequently until they are golden brown and fragrant. Remove from heat immediately to prevent burning.



In a small bowl, whisk together 1/4 cup of the reserved bacon fat, apple cider vinegar, and maple syrup. Season with salt and pepper to taste.






Divide the fresh spinach between two serving plates. Top each with thinly sliced red onion, fresh pear slices, goat cheese, and the toasted pine nuts.







Crumble the crispy bacon over the salads. Whisk the warm dressing once more and drizzle it over the salads before serving.
