Arrange the chicken drumsticks in a single layer on top of the rice bed.


In a small bowl, whisk together the orange juice, heavy cream, and olive brine, then pour the mixture over the chicken and rice.










Drizzle the olive oil and honey over the chicken. Garnish with olives, orange slices, tomato slices, minced garlic, and diced onion, then season everything with salt and pepper.











Sprinkle the Parmesan cheese over the top of the dish. Cover the baking dish tightly with aluminum foil and bake for 60 minutes, or until the chicken is cooked through and lightly browned.





Check the dish periodically; if the liquid has evaporated, add a few tablespoons of water or orange juice to keep the rice moist.
