While the shrimp rehydrates, cut the Napa cabbage in half, remove the core, and slice into 1-inch pieces. Separate the thicker white stems from the thinner leafy green tops into two bowls.





Drain the rehydrated shrimp and discard the soaking liquid.


Heat peanut oil in a wok or large skillet over high heat. Add the scallions, ginger, and rehydrated shrimp, tossing for 1 minute until fragrant.






Add the white cabbage stems to the wok, reduce heat to medium-high, and stir-fry for 3 to 4 minutes until edges become translucent.



Reduce heat to medium-low, add the leafy green cabbage tops, and cook for 2 minutes until wilted.



Whisk together soy sauce, cold water, and cornstarch in a small bowl to create a slurry. Pour over the cabbage and stir until the sauce thickens.







Season the stir-fry with salt and pepper to taste before serving.
