In a saucepan over medium-high heat, warm two tablespoons of olive oil. Add the diced onion and sauté for one minute until softened.



Stir in the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.




Add the anchovy fillets and a portion of their oil to the pan, mashing them with a wooden spoon until they dissolve into a chunky paste.



Incorporate the mushrooms and mixed herbs, then cover the pan and reduce the heat to low. Simmer until the mushrooms release their moisture.



Remove the lid, stir in the remaining olive oil, sun-dried tomato strips, and season with salt and pepper to taste.






Toss the cooked pasta with the mushroom sauce and serve immediately, topped with plenty of grated Parmesan cheese.
