Transfer the couscous to a steamer basket set over a pot of boiling water and steam for 20 minutes.

Remove the couscous, fluff it with a fork, and sprinkle with a little sugar. Return to the steamer for another 20 minutes.

Stir in the mixed dried fruits and continue to steam for a final 15 minutes until the couscous is tender and the fruit is plump.

Transfer the mixture to a serving dish and toss with a small amount of butter for richness before serving.
