Press the meat mixture into a jelly roll pan, using a rolling pin to create an even, flat layer. Use a knife to cut the meat into two equal square patties.



Preheat the grill. Grill the burger patties for 2-3 minutes per side until they reach an internal temperature of 71°C.




While the burgers finish cooking, place the burger buns on the top rack of the grill to warm through.


Once the burgers are cooked, top each with a slice of mozzarella cheese and tent with aluminum foil to melt the cheese.



In a small bowl, whisk together the olive oil, balsamic vinegar, and the remaining clove of minced garlic.





Assemble the burgers by placing the patty on the bottom bun, topping with a slice of tomato and fresh basil leaves, and drizzling with the prepared balsamic dressing.
