In a large mixing bowl, whisk together the dry ingredients including flour, sugar, and baking powder.





In a separate bowl, combine the Greek yogurt, olive oil, grapefruit juice, and grapefruit zest until smooth.






Gently fold the wet mixture into the dry ingredients until just combined, being careful not to overmix.


Grease a 9 x 5 inch loaf pan and pour the batter evenly into the pan.

Bake for 65 to 70 minutes, or until a toothpick inserted into the center comes out clean.
