Using a chef's knife, finely dice the red bell pepper and chop the fresh parsley.





In a large mixing bowl, whisk together the eggs, salt and pepper until the mixture is uniform and slightly frothy.





Fold the diced red bell pepper and chopped fresh parsley into the egg mixture.





Pour the egg mixture into the prepared muffin tray, filling each cup approximately three-quarters full.



Bake in the preheated oven for 20 to 25 minutes, or until the egg muffins are fully set and the tops are lightly golden.
