In a separate mixing bowl, whisk the egg yolks and sugar together until the mixture is pale and slightly thickened.




Slowly temper the egg mixture by gradually whisking in a small amount of the hot milk mixture, then pour everything back into the saucepan.






Cook the custard over low heat, stirring constantly with a wooden spoon until it thickens enough to coat the back of the spoon, then remove from heat and chill for 2 hours.


Pour the chilled mixture into an ice cream machine and churn according to the manufacturer's instructions.

Transfer the churned ice cream to a freezer-safe container and freeze for at least 4 hours to firm up.
