In a large pot, bring water to a boil and cook the moong dal with a pinch of salt until soft and creamy. Use a ladle to skim any foam from the surface.




In a separate frying pan, heat the cooking oil over medium heat. Add the onions and garlic, sautéing until golden brown, then stir in the spices and cook for another minute.




Add the vegetable curry ingredients to the frying pan and cook until tender. Season with salt and black pepper to taste.




Prepare the rice in a rice cooker or pot until fluffy. Serve the hot dal and vegetable curry alongside the steamed rice.
