Heat canola oil in a Dutch oven or cast iron skillet over medium-high heat. Sear the beef until browned on all sides, then remove the meat and set it aside.





Add the mixed vegetables to the same pot and sauté for several minutes until slightly softened. Season with a pinch of salt and pepper.




Deglaze the pot by pouring in the beer, scraping up any browned bits from the bottom, and let it reduce for a few minutes.



Return the beef to the pot. Add the thyme, beef stock, and Worcestershire sauce. Cover the pot with a lid and transfer it to the preheated oven.






Braise the roast for 6 to 8 hours until the meat is fork-tender. Serve warm with steamed potatoes or crusty bread.
