In a saucepan, heat the heavy cream and sugar until just simmering, then whisk in the chocolate until completely melted and smooth.





Temper the egg yolks by slowly adding a small amount of the warm chocolate mixture, then combine everything and stir in the vanilla extract.





Pour the custard mixture into the ramekins and fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.



Bake in the preheated oven until the edges are set but the centers still jiggle slightly, then remove and chill before serving.
