Cut the chicken breast into uniform 1-inch cubes. In a separate bowl, whisk the fresh eggs with salt and black pepper, then add the chicken pieces to coat them thoroughly.







In another bowl, combine the all-purpose flour and cornstarch. Using tongs, remove the chicken from the egg mixture, allowing excess to drip off, then dredge each piece in the flour mixture until evenly coated.






Heat the cooking oil in a large skillet over medium-high heat until it reaches 175°C. Fry the chicken in batches for 6 to 8 minutes, flipping halfway through, until golden brown and cooked through.



Remove the fried chicken and drain on a plate lined with paper towels. Wipe the skillet clean, add a fresh tablespoon of oil, and sauté the fresh garlic cloves and shallot for one minute.






Pour the prepared orange sauce into the skillet and simmer until it thickens. Add the fried chicken back to the pan, tossing to coat thoroughly, and simmer for an additional two minutes.



Serve the orange chicken over steamed white rice, garnished with toasted sesame seeds and chopped scallions.
