Place the potatoes on a baking sheet and bake for 60 to 90 minutes, or until they are fork-tender.



While the potatoes bake, finely chop the red onion, tomato, garlic, and fresh basil. Combine these in a bowl with the white cheese and set aside.









Once the potatoes are cooked, slice the tops off and carefully scoop the soft flesh into a large mixing bowl, keeping the skins intact.



Mash the potato flesh with butter, cultured dairy, and olive oil until smooth. Fold in the prepared bruschetta mixture and season with salt and pepper.






Spoon the potato mixture back into the empty skins and return them to the oven briefly to warm through before serving.
