In the same pan, sauté the onion, garlic, carrots, and celery until softened, about 5 minutes.






Return the beef to the pan. Pour in the stock and porter ale, add the bay leaf, and bring to a boil. Reduce heat and simmer for 1 hour until the beef is tender.






If the sauce is too bitter, stir in a small amount of dark chocolate. If the sauce requires thickening, remove the meat and vegetables with a slotted spoon.


In a small bowl, whisk a few tablespoons of the hot sauce with corn flour until smooth, then stir this mixture back into the main pot. Boil for 10 minutes until thickened, then return the meat and vegetables to the pot.




Serve the stew hot alongside prepared mashed potatoes.
