Finely dice the onion and bell peppers using a chef's knife.





Heat olive oil in a frying pan over medium heat. Add the merguez sausage and cook until browned and cooked through, then remove and set aside.




In the same pan, sauté the onions and peppers until softened. Stir in the harissa paste and season with salt and pepper.






Stuff the hollowed baguette with the cooked merguez sausage and the sautéed vegetable mixture. Place in the oven to toast until the bread is crisp.
