In a frying pan, heat the olive oil over medium heat and sauté the chopped onions and garlic until softened.





Add the andouillette sausage to the pan, breaking it up with a spatula, and cook until browned and fully cooked through.



Stir in the Dijon mustard and season the mixture with salt and pepper to taste.
