In a Dallah or small saucepan, bring the water to a gentle boil.



Add the light roast coffee grounds to the boiling water and simmer on low heat for 10 minutes.



Stir in the crushed cardamom pods and a pinch of saffron, then continue to simmer for another 50 minutes to allow the flavors to meld.



Remove from heat and let the coffee grounds settle at the bottom of the pot before pouring into small cups.
