Gradually add cold water and stir until the dough just begins to come together. Gently form the dough into a ball, flatten it into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.




In a medium skillet, heat the olive oil over medium heat. Add the onion and a pinch of salt, sautéing for 10 minutes until the onions are soft and translucent.




Remove the dough from the fridge and let it rest for 15 minutes. On a well-floured surface, use a rolling pin to roll the pastry into a circular shape about 1/8 inch thick.
