In a large bowl, toss the chopped potatoes, peppers, and onions with canola oil, garlic salt, and black pepper until evenly coated.








Spread the vegetable mixture onto a baking sheet and roast in the preheated oven for 10 minutes.


Remove the baking sheet from the oven, add the sliced Andouille sausage to the pan, and toss gently. Return to the oven and roast for an additional 10 minutes until the potatoes are tender and the sausage is browned.




Remove from the oven, sprinkle with a dash of cayenne pepper, and garnish with freshly chopped scallions before serving.
