Shape the meat mixture into 12 to 14 small, oblong patties.
Heat a large skillet over medium-high heat. Brown the patties in batches until they are crispy on both sides and cooked through, then transfer them to a serving dish.


Reduce the skillet heat to medium. Add the remaining chopped onion to the pan drippings, seasoning with salt and pepper, and sauté until translucent.




Stir in the remaining minced garlic, Roma tomatoes, dried parsley, and ras el hanout. Add water and simmer until the tomatoes have softened.
