Preheat your oven to 165°C.

Trim excess fat from the beef roast using a sharp knife.


In a bowl, combine minced garlic, mixed herbs, salt, pepper, and olive oil to create a paste.





Rub the garlic and herb mixture evenly over all sides of the beef roast.


Truss the roast with kitchen twine and tuck a bay leaf under each string.




Place the roast in a roasting pan and cook until the internal temperature reaches 49°C for medium-rare.
