In a large stock pot, combine the ginger, cinnamon sticks, and water. Bring to a boil, then reduce heat and simmer for 60 minutes to extract the flavors.




Strain the liquid through a fine mesh sieve into a clean pot, discarding the ginger and cinnamon solids.




Add the brown sugar to the strained liquid and simmer for another 15 minutes until the sugar is fully dissolved and the flavor is balanced.


Remove from heat and allow the punch to cool completely before refrigerating. Serve chilled, garnished with dried persimmons and pine nuts.
