Preheat your oven to 180°C. Slice the tops off the beefsteak tomatoes and reserve them. Using a teaspoon, carefully scoop out the pulp, keeping the juices, and set aside. Sprinkle the inside of the hollowed tomatoes with a pinch of sugar to balance acidity and arrange them on a baking tray.

Finely chop the reserved tomato pulp. In a large frying pan, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, sautéing for 10 minutes until softened.








Increase the heat and add the ground lamb, ground cinnamon, and tomato puree to the pan. Fry until the meat is thoroughly browned.






Stir in the chopped tomato pulp, tomato juices, parboiled rice, and beef stock. Season with salt and pepper to taste. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes until the rice is tender and liquid is absorbed. Remove from heat and stir in the fresh herbs.








Stuff the tomato shells with the lamb and rice mixture. Replace the tomato lids, drizzle with the remaining 2 tablespoons of olive oil, and pour 3 tablespoons of water into the base of the baking tray. Bake for 35 minutes.
