Remove the steaks from the skillet and set aside on a plate. Add the beef stock to the hot skillet and reduce the liquid by half, which should take about 10 minutes. Pour the reduced stock into a bowl and set aside.




Return the skillet to the heat and melt the butter. Add the minced garlic and chopped shallots, sautéing until softened, about 2 minutes.





Add the mushrooms to the skillet and cook until they release their moisture, the liquid evaporates, and they begin to brown, about 2 minutes.


Carefully add the cognac to the skillet and ignite to flambé, cooking until the flames subside.



Stir in the reserved reduced stock, heavy cream, Dijon mustard, Worcestershire sauce, and hot sauce. Return the steaks to the skillet and cook, turning them in the sauce until warmed through and the sauce has thickened, about 4 minutes.







Transfer the steaks to serving plates, stir the fresh parsley and chives into the sauce, and pour the sauce over the steaks to serve.
