In a large pot, heat the cooking oil over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant.





Add the rinsed red lentils, turmeric, and curry leaves to the pot. Pour in enough water or coconut milk to cover the lentils by an inch.






Bring the mixture to a gentle boil, then reduce heat to low and simmer until the lentils are tender and have absorbed most of the liquid.


Season the dhal with salt and pepper to taste, stirring well to combine before serving hot.
