In a measuring cup, beat the egg with the vinegar, then add enough ice water to reach the 1-cup mark. Gradually stir this liquid into the flour mixture until the dough just clings together.






Gather the dough into a ball on a floured surface, divide into 5 equal discs, and wrap tightly in plastic wrap. Chill 2 discs for 1 hour and freeze the remaining 3 for future use.



Preheat the oven to 175°C and line a baking sheet with aluminum foil.



Roll out one chilled dough disc into a 12-inch circle and place it into a 9-inch pie plate, allowing the edges to overhang.



In a large bowl, toss the Saskatoon berries with sugar and cornstarch. Pour the mixture into the prepared pie crust and dot the top with small pieces of butter.





Roll out the second dough disc and cut into 6 wide strips. Weave the strips over the filling in a lattice pattern, connecting them to the bottom crust edges, and crimp the edges to seal.


Brush the lattice top with egg wash and sprinkle with the remaining sugar. Bake on the prepared baking sheet for 90 to 100 minutes until golden brown and bubbling.






Remove from the oven and cool on a wire rack before serving.
